So my Amma is one of the best cooks I know and when it comes to non-vegetarian food she is better than the best. I miss the chicken, mutton, fish and prawns that she cooks. Every single day of my life :(

On some days, when I am in the mood for it, I take it upon myself to marinate some chicken and come up with something that tastes and smells atleast remotely like something she cooks. 

Below is a simple chicken recipe for a simple pan-fried chicken dish.

WHAT YOU NEED FOR THE BEST INDIAN CHICKEN RECIPE
  1. Chicken Fillet Pieces
  2. Yogurt/ Curd
  3. Chili powder
  4. Coriander Powder
  5. Cumin Powder
  6. Ginger Garlic paste
  7. Pepper
  8. Salt
  9. Garam Masala 
  10. Tandoori Masala
  11. Oil
PRE-COOKING PREP
  1. Wash and clean the chicken
  2. Make a marinade comprising of a Tbsp of curd/plain yogurt along with chilli powder, coriander powder, cumin powder, ginger garlic paste, pepper, salt, garam masala and tandoori masala.
  3. Marinate the chicken in the above mix and keep in the refrigerator for about 30 minutes to 1 hour (the more, the better!)
You can use a similar marinade for paneer and tofu as well. ( I've tried both!)

How to make Easy Indian Chicken | Chicken Recipe

1️⃣ Heat ghee/oil/butter in a pan
2️⃣ Add cumin seeds and chopped garlic and fry till slightly brown
3️⃣ I'm currently obsessing over Kasoori/Kasuri Methi, so add that as well. It gives the dish a soothing and pleasant aroma. 
4️⃣ Add in the marinated chicken and let it cook till the marinade becomes a crispy coating
5️⃣ Tadaaa! Eat it as a starter or cut up pieces and add to your salad bowl. (I did both😝)

I've gone to Gokarna three times in a row. 2013, 2014 and 2015 and I know the three times is most definitely going to increase to uncountable number of times. Gokarna is actually a temple town in Karnataka,India. Devout people come there only to visit the Gokarnanatha Temple in the main town and see  (dirty) Gokarna Beach. We chose to go away from the usual track and explore the beaches on the other side of town. The first time around we took a train from Bangalore (Yeshwanthpur Station) and got off at the Gokarna Road railway station. The next time we boarded a bus from Navrang Stop at Rajajinagar and got off at the Gokarna Bus Stop. The third time around we boarded the bus from the same stop as above but got off at Kumta since we decided on having a detour before heading to Gokarn (Goks as we call it).
