I attribute my varied palate to my Appa and Amma and no one else. Although South-Indian, growing up I was exposed to so many cuisines and I am not talking about, "just in restaurants". I am talking about "in Amma's kitchen". She wasn't just the Idli-Dosa kinda mom. She always ensured that she cooked up a different storm in the kitchen everyday and for that, I cannot be more thankful.
Way before this whole "vegan" thing came into existence, she introduced me to Soya Chunks.
We did eat non-veg at home but not everyday. That's when the humble Soya Chunks/ Soya Nuggets come to the rescue. The texture and taste (according to me) are nothing when compared to chicken but there is something about these nuggets that strike a chord with my palate.
Soya chunks especially when cooked in a curry form absorb water and spices. You take one bite and you realize how juicy the soya chunks are. That is my FAVOURITE part.
I tried out a very simple and light version of a Soya Chunks Curry. Please find the recipe below.

WHAT YOU NEED FOR THE SOYA CHUNKS CURRY
1 cup of soya nuggets (soaked in hot water for half an hour and squeezed thoroughly)
1 big onion (chopped)
2 tomatoes (chopped)
Salt
Chili Powder
Turmeric Powder (Haldi)
Coriander Powder (Dhaniya)
Cumin Powder (Jeera)
Pepper
Garam Masala
Asoefitida (Hing)
Oil
Cumin Seeds
Chopped Garlic (optional)
Boiled broccoli florets
Broccoli stock
For the vegetables to have a distinct flavour I marinated the soya chunks and broccoli in the spices mentioned above and kept them aside for 15 minutes.
SOYA CHUNKS CURRY RECIPE
Heat oil in a pan.
Once the oil is hot, add in the cumin seeds. Wait for the raw smell to recede.
After this, add in the chopped onions and sautee till they become soft and transparent.
Then add in the chopped tomatoes.
Add some spice powders such as (haldi, chili, coriander and cumin powder,garam masala, pepper, salt)- Mix and cover the pan for 2-3 minutes till the tomatoes become soft.
- Then add in the marinated broccoli and soya chunks and stir the mixture.
- Add half a cup of water to the mixture to prevent the vegetables from sticking to the pan and also for the gravy-like consistency.
- Cover the pan again for 2-3 minutes and cook on low-medium flame
- Turn off the flame and stir.
Quick, easy and tasty Soya Chunks and Broccoli Curry is now ready. You can eat it with chapathi (Indian flat bread) or rice.
