Okra/ Bhindi/ Ladies Finger happens to be one of my favourite green vegetables. I like devouring it in two particular forms only: The Bhindi fry made by my Amma and the other one in it's crispy, crunchy form.
Yesterday, I decided to prepare the latter for a dear friend's birthday. It turned out alright-ish and was eaten as a starter and was also used as seasoning for the creamy mushroom pasta (Haha!).
Preparation Time: 15 minutes (Approx.)
Cook Time: 15 minutes (Approx.)
Preparation Steps
1. Wash the Bhindi/Lady Finger under cold running water. Use a kitchen towel or paper napkins to pat them dry such that there is no moisture left behind.
2. Slice the Bhindi/Lady Finger into smaller pieces, either horizontally or vertically.
3. Place the cut and dry Bhindi/Lady Finger in a bowl.
4. Sprinkle red chili powder, cumin powder, turmeric powder and salt as per taste.
5. Then add about 3-4 tbsp of corn flour over the above mixture.
6. Use your hands or two spoons to mix the Bhindi/Lady Finger with the spices and corn flour. Ensure that all the pieces of Bhindi/Lady Finger are almost evenly coated with the corn flour and spices mixture.
7. Marinate the contents of the bowl for about 3 minutes.
Cooking Steps
While the Bhindi marinates in the spices and corn flour you can start prepping to cook the Bhindi.
1. In a Pan add some Olive Oil and heat it.
2. To the hot oil add some mustard seeds and ginger-garlic paste. Ensure that the flame is on "sim" so that the contents do not splatter on you.
3.Shallow fry the marinated Bhindi in hot oil.
4. Keep stirring the mixture with a ladle.
5. Fry the Bhindi until it turns golden brown and looks crispy.
6. As and when you take the Bhindi out from the pan , place it on tissue paper to drain out the excess oil
7. Finally, sprinkle some Garam Masala. Chaat Masala over the fried Bhindi and mix them gently.
Crispy Bhindi/ Lady Finger/ Okra is ready to be served!
