Potato Stew | Potato Stew Recipe | Kerala Recipes

I am a Kannadiga meaning I am from Karnataka, in the Southern part of India. 
That said, my parents have always exposed me to different cuisines from the Southern region as well as other parts of India.
Since my dad grew up in Kerala, he has a special place for Kerala/Malabar cuisine, in his heart which he has passed on to me as well.

On every trip to Kerala, I remember my father ordering Kerala/Malabar Parota with Kerala style Potato stew / Chicken Stew or Mutton Stew. 

In November 2018, on a sunny weekend day in Singapore, I decided to cook the Kerala Recipe Potato Stew at home.

Here is the recipe for the same, inspired by a recipe shared by Alisha on Instagram. 

POTATO STEW | POTATO STEW RECIPE | KERALA RECIPE | INDIAN RECIPE

WHAT YOU NEED FOR POTATO STEW

  • 2 tbsp olive oil (use coconut oil, if you can)
  • 2 medium sized onion (chopped)
  • 2 medium-big potatoes (boiled and cut in cubes)
  • 4-5 cloves
  • 1-2 cinnamon sticks
  • 2-3 cardamom pods
  • A sprig of curry leaves
  • An inch of ginger
  • 2-3 green chilies
  • 100ml coconut milk
  • 2 tsp coriander powder
  • Salt to taste 
  • Water

RECIPE


  • Oil 2 tbsp of olive oil to a heavy bottom sauce pan and once the oil is hot enough add the cloves, cinnamon and crushed cardamom pods. 
  • Toss these in the pan for 1 min and then add finely chopped onions and a sprig of curry leaves.
  • Saute the mixture in the pan till the onions become transparent
  • Then add sliced green chilies and grated ginger
  • Saute for 3-4 minutes
  • Add the potatoes and then add salt (as per your taste)
  • Keep stirring to make sure that the potatoes do not stick to the bottom up
  • Add some water to the pan and close the lid for 2 minutes
  • In a separate bowl, add some water to 2 teaspoons of coriander powder
  • Once the coriander powder swells up add it to the pan
  • Mix everything well and add some water based on how thick you like your gravy
  • Then add coconut milk based on how much you like the flavour of coconut
  • Add some more salt if needed. 
  • Mix everything together for about 2-3 minutes and serve hot with Kerala Parota or Rice
You can follow the above recipe for chicken as well. Just replace the potatoes with marinated chicken and Voila. Kerala Chicken Stew is ready.
